Coconut Oil Blueberry and Banana Bread Recipe

Not a great photo, I apologise,  but I wasn’t going to blog about this recipe until I received a number of requests for it! This was delicious warm with a cup of tea, and the perfect 11 o clock snack to get me through the morning at work. The banana and blueberries add natural sweetness without the need for lots of sugar, just a bit of unprocessed maple syrup. Additionally you can add wholegrain goodness to the loaf with spelt flour! 

Blueberry Banana Bread 

Cuts into 10-12 slices

3 very ripe bananas
50ml melted coconut oil
1 egg
1tsp vanilla extract
3-4tbsp maple syrup (depending on just how ripe your bananas are, the riper, the sweeter they are)
1tsp ground cinnamon
175g Spelt flour (or plain- if using plain use 200g)
1tsp bicarbonate of soda
100g blueberries, plus extra to decorate

Preheat the oven to 200C (180C fan). Grease and line a 2lb loaf tin. 

In a large bowl, mash the bananas and stir in the coconut oil, egg, maple vanilla extract and maple syrup.  In a separate bowl, stir together the cinnamon, flour and bicarbonate of soda. Sieve the dry ingredients in to the wet and stir together. Fold through most of the blueberries. 
Pour the batter in to the tin and sprinkle over remaining blueberries. Bake for  50min-1hr or until a skewer inserted comes out clean.
